Hello everyone, I am glad to finally find time for BPA Academy's Test Kitchen food blog. I started since year 2005 when I was in college taking up Associated Occupational Studies at The Culinary Institute of America. I never forget a cousin a.k.a C.A. who introduced me to blogging. As foreign in Delaware where I had my internship, she shared to me this beautiful hobby since I tell her how bored I was during my vacant time after work, she is a good photographer and designer. Thanks to her!🍪
I am single mom with a son and a pastry chef slash school directress for a baking school in the Metro of Manila, Philippines. Those days of extraordinary experience now gives me a clearer view of what The Almighty wants me to be, I know that in my heart now. Allow me not to be in detail about His calling for yours truly. Some of you who may know me, could make a guess of what's the obvious but each of us has a great purpose in this life, your calling, ever thought about it? Write it down or sometimes you don't even have to because you know it already in your heart, it is that sole thing that makes you happy, if not that thing that gives you inner joy, it's a cliche ( Kli-shay) but yes that is passion. This is it, food! One thing besides my family and friends that I am passionate about. I am the type who could not get a complete 8 hour sleep if an idea about food pops up in mind, I get all excited and uneasy that I do not know where and how to start it. Share your comments below if you find my story similar to you:)🍭
Running a baking school is never easy and being a single mom is another story. I am blessed to be given such graces that makes me who I am now. I never thought that mimicking my teachers in my alma mater would make me a teacher now. I never thought that my love for baking at home in the early age of twelve (12) would make me a pastry chef now and my being domesticated would make me a humbled mom now of course with the help of my family.🍧
As my come-back post, C o f f e e and Toasts ( in Filipino : K a p e at Tinapay). A typical day for yours truly is frequently developing recipes to make Baking and Pastry Arts Academy better or maybe humbly the best. Testing rice flour on my dough, came out excellent after many tests.
You just hit the right texture and ratio in every formula ( pardon me for the uncropped photo:). As we always say, baking is science, precision and understanding of methods. Hereunder is our recipe, try it!1/2 cup warm water

Coffee is just regular store-bought coffee, hihi!,no time to brew my barako coffee after the Holy Week break. " Do chefs cook or bake even on a regular day?" ,I personally agree to that, yes yes, as we always say at Baking and Pastry Arts Academy, " Practice something and master it". May I add to that, " if you keep failing, practice again and again and again until you master it. Develop the habit of redoing something that you want to be good at!🍮 Joggling teaching, being a mum is fun and challenging. I take time to still read and write in this modern time of advance technology. Do you still do the same? Share your comment below. Friends say my handwriting is hard to understand but I really do like writing, it feels like I just had a good workout after expressing myself. I am writer, an artist in a variety of mediums. Share your photos of the r I c e bread you tried and even photos. Salamat( thank you very much) for reading my come back post, see you soon, be posting on Facebook for the new blogpost. Share to us what you would like us to blog about, I'd be glad to share to you my thoughts, more power to you always:) Chef KC
