Tomato, Herb and Cheese Fritata In Filipino: Tortang Itlog,Kamatis, Herbs at Keso

Baking and Pastry Arts Academy in Quezon City,Philippines) has quite a number of herb selections in our mini orchard. We strongly  believe in our school's mantra to always "Practice something and master it". To do things repetitively like cooking and baking and surely you will master it. I used Dill and Oregano for this egg dish. There are many ways of making fritatas but for me, any egg dish is a comfort food on a tiring and blessed week of teaching. Hope you enjoy our recipe:)

Here are the ingredients:
2 Tablespoons Whole butter
1 medium white onions,chopped
3 medium tomatoes,sliced
3 Tablespoons of Dill
1 teaspoon of oregano
salt to taste
pepper to taste
1 teaspoon of dried oregano
1/2 cup of mild cheddar cheese,grated
4 pieces of whole eggs seasoned lightly with salt and pepper, beaten
Tip: a sprinkle of water on the beaten eggs to make it fluffly


Heat up a saute pan, add in butter,sweat onions,vegetables and herbs with seasonings,slow down on salt since this dish has quite a lot of cheese:) Cover in between cooking until onions are translucent and vegetables are al dente (Italian term meaning :firm to the touch),
Set aside on a plate. Using the same pan, melt leftover butter from the recipe, do not burn, however brown and black butter are especially requested depending on the use in the recipe, we want a light yellow melted fat, pour in beaten and slightly flavored eggs, swirl pan as you build up a soft but firm bottom cake,let uncooked liquid egg mixture stream around and underneathe the bottom layer of egg you have made.
After developing a light yellow color on the bottom of the egg,flip to cook the top part, 5 sececonds after,
pour in grated cheese then the pre-cooked vegetables and herbs, cover a lest than 10-15 seconds to create fluffy dish. Uncover, serve while hot with soft rolls or even over steamed rice.Maligayang pagkain ng aming fritata ( as we say it in Filipino), Bonne Apetite!
